Vegetarian Proteins
Tofu, tempeh and meat substitutes are perishable once opened, similar to dairy or meat, even though many are shelf stable unopened. Water-packed tofu needs its liquid changed regularly to stay fresh once the package is open.

| Food | Pantry | Fridge | Freezer |
|---|---|---|---|
| Miso | 1 year | Not recommended | |
| Re-hydrated textured soy protein | 3 to 4 months | 3 to 4 days | |
| Soy flour | 2 months | 6 months | |
| Textured soy protein | 2 years | ||
| Tofu | 1 week | 5 months |
Signs vegetarian proteins have gone bad
- Sour or off smell instead of a neutral, mild scent
- Slimy film developing on the surface of tofu
- Discoloration, especially yellowing or dark spots
- Mould, often black or white, on tempeh
- Packaging that has swollen or lost its seal
Storage habits
Refrigerate opened tofu submerged in fresh water in a covered container, changing the water daily, and use within about a week. Keep tempeh and meat substitutes in their sealed packaging until use, then reseal tightly. Freeze extra tofu or tempeh in an airtight container for longer storage; the texture will change slightly.
