• USDA food safety basics for the temperature and time rules quoted on every page (40 F fridge, 0 F freezer, 2 hour rule).
• Spoilage signs and storage habits are editorial, written per category from standard food safety guidance, and are marked as general signs rather than dataset values.

The site is rebuilt from the dataset file, never fetched live; an upstream outage cannot change what you see. When USDA publishes a new version we reload it, re-run our checks, and note the change here.
